Sumahs is a dark red powdered spice made from vinegar fruit. Ground vinegars have a slightly sour, lemon flavor. The amount is added when preparing salads, fish and meat dishes. The spice is especially good to complement lamb dishes, including kebabs and shashlik.
The sum is also added to grilled dishes, legumes, vegetables, cereals. The spice is suitable for pilaf and meat marinade. It is traditionally used in Oriental cuisine. Often used with onions. It can even be used in desserts and fruit salads.
